Alumnus, registrar present research on vegetarian, vegan students

Elon Alumnus Brett Evans '13 teams up with Registrar Rodney Parks to present research on recruiting and retaining vegetarian and vegan students.

Evans and Parks presented a phenomenological case study at the American Association of Collegiate Registrars and Admissions Officers (AACRAO) Strategic Enrollment Management Conference on Nov. 11-13.

Despite the growing number of students who self-identify as vegetarian or vegan, little research has been conducted on how college campuses can work to recruit and retain these students. Issues such as on-campus dining facilities, housing selection and programming resources were explored. 

Using a dual instrumental case study, the authors explored the experiences of two vegan and four vegetarian students attending the university in an effort to shed light on the challenges and needs of this vulnerable student population. The authors provided recommendations for campus administrators to help address the needs of this growing student demographic.
