The Elon University Board of Trustees has elected Edward Doherty, Saddle River, N.J., to serve an unexpired term on the board that concludes in spring 2008. He was formally installed as a member at the board’s fall meeting, Oct. 6-7.
Doherty is president of Doherty Enterprises, Inc., which operates Applebee’s Neighborhood Grill & Bar restaurants, Panera Bread Bakery Cafes and Chevys Fresh Mex franchise restaurants in New York and New Jersey.
He and his wife, Joan, are members of Elon’s Parents Council as well as President’s Circle members of the Elon Society, the university’s annual giving organization. The Dohertys have participated in Leadership Elon, a two-day informational seminar designed for parents, faculty and staff, and friends of Elon. Doherty has a bachelor’s degree in marketing and a master’s degree in business administration from St. John’s University, Queens, N.Y.
The Doherty’s daughter, Kerry, is a senior at Elon majoring in corporate communications.
