Elon Dining breakfast featured in national publication

Elon Dining provides innovative breakfast options as students shift toward full sit-down meals. 

A spotlight was placed on Elon Dining and the generational shift toward breakfast in “Breakfast: Rising and Shining,” featured in the September 2015 edition of “On-Campus Hospitality.”

Pulkit Vigg, resident district manager at Elon University, and the rest of the Elon Dining team, have reacted to the student desires of a full sit-down meal by offering innovative food service options in dining locations across campus.

In particular, the addition of a Mongolian Omelet Bar at Lakeside Dining Hall has proven to be popular with students. “We wanted to do something else with the Mongolian grill because we were tired of what we were doing,” Vigg said. “We were doing pancakes, we were doing French toast, we were doing omelets there. We wanted to try something else.” 

The students are noticing the changes in the dining locations, and Elon Dining is taking notes. “We at Elon Dining take a lot of pride in being really creative and innovative in our programming,” Vigg said. “Our students expect nothing less of us. They look for something different every semester. As a matter of fact, they look for something different each week.” 

In addition to the Mongolian Omelet Bar, Einstein Bros. Bagels opened in the Danieley Commons at the end of August, which provides bagels, coffee, and fresh fruit to the Danieley and Colonnades neighborhoods. Also new this year is the weekend Big Brunch at Lakeside, which has a higher-end brunch menu including steak, salmon, custom made omelets, and more.
